A total of 18 wild edible mushrooms of the Cantharellus sp. were collected from the northwestern Himalayan region of India and their nutrient (moisture, total carbohydrates, dietary fiber, crude fat, ash, nitrogen, protein and amino acid) contents were determined. The mushrooms were found to be rich sources of protein and carbohydrates and contained low amounts of fat. Total phenols contents and antioxidative activity of water and methanol extracts were also determined. The mushrooms contained significant amounts of phenols and demonstated antioxidative activity. During the study, the precise antioxidant status of the 18 indigenous species of mushrooms was ascertained; it is suggested that this could serve as a useful database for the selection of mushrooms for use as ingredients in nutraceutical products.
