The characteristics of meat from young goats raised in the argan tree forest in the south-western part of Morocco were studied, during two consecutive years. Male young goats were reared either indoors or outdoors. Indoor-raised goats were offered only a concentrate and outdoor-raised goats were received either a concentrate or only argan fruit pulp. Outdoor-raised goats receiving argan fruit pulp had a very low growth rate in the trial (34 g/d), but a relatively high growth rate in the trial 2 (64 g/d), probably because herbaceous vegetation availability was higher. Indoor-raised goats had an average daily gain of about 50 g/d in the two trials. In each trial, abdominal adipose tissues weights were the lowest in the two groups of goats raised outdoors. Lipid and cholesterol contents of muscles were lower in goats raised in the argan tree forest than in goats raised indoors. The two groups of outdoor-raised goats had particularly high percentages of odd-chain FA, branched-chain FA of iso and anteiso series and n-6 and n-3 polyunsaturated FA (PUFA), and a lower n-6:n-3 PUFA ratio than indoor-raised goats at once in adipose tissues and muscles. Indoor-raised goats had a higher percentage of palmitic acid and a lower percentage of archidic acid than outdoor-raised goats. Meat of goats reared in the argan tree forest can be considered as meat with beneficial characteristics in regards to human health because of its low fat content and its FA profile.
