I was lunching recently with my good mate and restaurateur, Tim Connell, at his beautiful Sydney restaurant, Coast, enjoying a range of delicious, Italian-inspired seafood dishes, when the talk at our table inevitably turned to fish. 'Inevitably, I say because long before Connell was a savvy, multi-city restaurateur, he was a fishmonger. In the mid '80's when Tim was King of the Sea in Melbourne, I was a wet-behind-the-gills, new boy in the game, lucky enough to have the likes of Neil Perry, Steve Manfredi, Serge Danserau, Damian Pignolet and Gay Bilson as customers, encouraging me to have a go at bringing them something different, something special, something unique.
