Significance of packaging in food safety programmes is discussed with reference to: functional role of packaging; concerns about migration of packaging components; the need for pack integrity (e.g. for cans) to prevent pathogen contamination and food spoilage; selection of appropriate packaging materials; use of checklists to monitor sealing integrity (e.g. for low-acid canned foods); troubleshooting; and provision of safety-related labelling information (allergens, cooking instructions, etc.) on food packs.
