摘要

The word honey is almost spontaneously associated to the attributes: natural, sweet and energetic. Quality criteria that reflect the expectations and/or the general attitude of consumers toward the food they ingest daily. Not necessarily the three words in a row but either single or combined to define one's preferences in the moment of choosing a foodstuff. Honey is indeed a multi-talent in terms of food applications and nutritional value. As might be expected, the most stringent standards are applied to its authenticity, quality and purity, but its versatile functionality is what makes it truly stand out from the crowd.
