US food consumption patterns have changed considerably over the last 20 years. Factors influencing these changes include changes in relative prices, increases in real disposable income, and more food assistance for the poor. An overview of per caputfood supply trends in the USA for the 1977-98 period is presented. Particular trends noted include: record high meat consumption in 1988; total milkfat consumption remaining high; increase in consumption of added fats; increased choice of fruits and vegetables, increased consumption of added sugars; and significant increase in grain consumption, driven by convenience and health concerns.
