Developments in microbiological and genetic techniques for detection and isolation of food pathogens are discussed. Aspects considered include: the inability of enrichment techniques to respond to the increasing demand for rapid analysis; the trend towards use of PCR/DNA-based techniques; an assay for pathogen detection that utilizes antibody-coated paramagnetic particles; and potential risks associated with rapid methods.
