Hop up HACCP with IEST recommended practices.

The Institute of Environmental Sciences and Technology (IEST) in the US provides non-mandatory guidelines for various aspects of manufacturing processes, including contamination control. This article discusses ways in which IEST recommended practices could improve the consistency and clarity of the standard operating procedures in established HACCP programmes used in food factories, in relation to: air flow; cross contamination; cleanroom environments; protective garments; wiping materials; and glove use.
