This paper focuses on innovative operational changes implemented by the US food industry to meet consumer demands. The Efficient Consumer Response initiative launched by grocery retailers and industry trade associations in 1992 is described, as wellas the Efficient Foodservice Response initiative launched by the catering industry in 1996. Also discussed is the tendency of food retailers and distributors to merge to better serve customers and increase profits. Food processors are also adjusting their organizations in response to trends in consumer demand.
