摘要

This paper examines shifts in global food consumption and trade during the period 1961-98. It shows that world grain trade decreased as processed food trade increased and that income growth and urbanization fuel food consumption increases. It also shows that health concerns as well as concerns about safety, ecology, and animal welfare, influence food choices.
