Food safety efforts accelerate in the 1990's.

摘要

This paper reviews the important events in food safety of the last decade and looks ahead at new efforts to reduce microbial contamination of foods. Concern and action on foodborne illness outbreaks, modernization of food inspection systems, new regulations on seafood and juice, food safety initiatives, the increase in scientific knowledge through the FoodNet system, meat and poultry safety, an action plan for egg safety, and new educational efforts, are discussed. It is concluded that developments in food safety policy have helped the USA make progress in the goal of ensuring the safest food supply. Changes in regulations governing food production and responses by producers have helped control and reduce risks from microbial pathogens. New surveillance efforts have helped determine the extent of foodborne illness in the USA and the most important sources of food safety risks. Educational efforts have increased public awareness and enabled consumers to protect themselves from foodborne diseases.
