Today, Americans are consuming over a billion servings of fresh produce every day. Consumers expect that the fruits and vegetables they eat are perfectly safe. Recent foodborne illness outbreaks, however, have shaken consumer confidence in the food supply. This is partly due to the outbreak itself and partly due to the way the agencies in charge of keeping food safe handle such a crisis. Fresh produce is especially susceptible to foodborne illness for many reasons.
