摘要

There is no generally accepted definition of the term 'non-conventional yeasts'. Many are of the opinion that this term is synonymous with 'non-Saccharomyces yeasts', although others include in conventional yeasts also at least Schizosaccharomyces pombe and Kluyveromyces lactis. The term is gradually losing significance and usefulness since more and more 'non-conventional yeasts' are gaining importance in, conventional or unconventional, fundamental and applied studies and processes.
