THE purpose of food products is diverse. It reaches from its very elementary function of providing nutrients for our survival to its role as a status symbol and lifestyle goods. Salt was the first food product to be traded over significant distances.It was followed much later by herbs and spices. These were high-value goods and rather exotic exemptions. Since the beginning of agriculture around 8,000 years ago until modern times, food was always produced and consumed locally. In animal production, this led to the development of local breeds and production systems. Obviously, rudimentary knowledge about food preservation by salting and drying also allowed people to travel to and trade with remote areas.
