'Stealth' effort to cut sodium starts

RESEARCHERS at the U.S. Department of Agriculture and U.S. Department of Health & Human Services have teamed up to advance the sodium surveillance efforts of HHS. The efforts are tied to the National Institute of Medicine and its call for the Food & Drug Administration to establish mandatory national standards for sodium content in foods. At a conference last month sponsored by the Agricultural Research Service (ARS), food manufacturers said they are moving toward reducing sodium in their foods, especially in prepared and processed foods.
