ORGANIC farmers and those who produce using conventional agricultural methods have much in common - namely that making a decent profit has become increasingly difficult. That was one of the main messages to emerge at Heriot Watt University in Edinburgh where the Soil Association staged its annual conference. The Soil Association is the organisation which monitors and sets the standards for organic produce, which has grown enormously in recent times. However, Patrick Holden, the association's director, made it clear that much has changed since organic production first began to attract consumer attention over 20 years ago.
