Development of a scientific basis for powdered milk dissolution

摘要

It is known that basic volumes of dry milk products (DMP) processed in different branches of the industry suppose the availability of a process for their solution in water. Practical results show that technical-technological presentation of the mentioned process stipulates the qualitative characteristics and quantitative yield of the product, efficiency of the technological equipment operation and indirectly impacts the enterprise working routine.The wide assortment and heterogeneous nature of DMP raw material, disparity in operating principles for the industrial equipment, as well as an undeveloped methodological base of evaluative criteria for process efficiency make it impossible to generalizeproduction and experimental data. Accordingly, the actual task is substantiation of the rational parameters of reconstitution technology from the point of view of process simulation. A mathematical model was developed to examine monoparticle immersion with variable form, density range and wetting contact angle in static conditions. The model can be extended to describe real polycomponent dynamic systems.
