The glycaemic index (GI) of 8 different German honeys (DIB products) was determined according to the FAO/WHO protocol in 10 healthy adults (aged 31.5+or-8.1years). The corresponding insulin kinetics were measured in the same experiment and the glycaemic load (GL) was calculated for 20 g of each honey. Most of the honeys had much lower GI values than the glucose control. For 6 of the 8 honeys, the GI was 55 or less, and this may be regarded as favourable for nutritional physiology. The GL values were correspondingly low. The insulin kinetics were also favourable, with a mean of 55% relative to the reference glucose. The properties of the honeys may be important for the consumer, as current recommendations on the quality of carbohydrates and their consumption indicate that carbohydrate-rich foods with low GI and GL may have favourable effects on weight changes in overweight subjects, and on the development of insulin resistance in individuals with impaired glucose tolerance.
