摘要

It has been scientifically proven that oat has numerous properties that are beneficial to human health. The most important of these are the lowering of blood cholesterol and improved control of blood glucose and insulin. Oat products also contributeto weight control and normalization of bowel function. Since the chemical compounds found in oats have been associated with many common diseases such as cardiovascular disease, adult-onset diabetes and obesity, oats can be an excellent raw material for those developing functional foods. According to current knowledge, the most important health ingredient of oat is its soluble fibre beta-glucan, though there is evidence of health benefits from other compounds of oats as well.
