The present paper investigates the production of ethanol from banana peels using yeast in a batch fermentor.The starch,originally present in banana peels,was first hydrolyzed using acid hydrolysis to sugarandthen the total sugar was converted to alcohol.The ethanol obtained after fermentation for 24 h was about 0.5 g per g of sugar converted.The glucose conversion data was verified using a mathematical model.Maximum glucose conversion obtained was 80.Furthermore,a technique for cutting down the fermentation time has also been elaborated.
