Over the period 1994-2003, the dairy industry in the EU-15 has seen significant structural change, notably the emergence of a small number of very large enterprises accounting for a large and growing share of milk collected and output of dairy products. Nevertheless, a large number of small enterprises continue to co-exist with the large ones. Illustrated with graphs, this paper looks at the overall sector structure, and separately at the drinking milk, butter and cheese industries..
