摘要

Shrimp head waste (SHW) which is mostly dumped in coastal areas resulting in major surface pollution. The shrimp waste contains biopolymers like chitin, chitosan, protein with high economical value and can be converted to shrimp head meal (SHM). In the present study proximate composition of SHM prepared by conventional and biofermenter method of fermentation using Lactobacillus brevis, Bacillus amyloliquifaciens and Bacillus subtilis was analyzed.
