摘要

The aim of the research was to determine the level and structure of organic food consumption in the selected regions of the country, and to indicate the factors that shape the demand for this kind of food. It was stated that organic food consumption in Poland is still low, even among its declared consumers. The consumers of this food are first of all families with relatively high income, high social status, and dwelling in large cities. Organic food consumers first of all perceive its health and nutritive attributes, which are connected with individual benefit. They less strongly perceive its positive influence on the natural environment. The availability of this kind of food is limited by poorly-developed distribution and narrow range of products,an aspect that concerns animal products in particular. Forecasting the development of organic food on the Polish market one should take into consideration its high (in comparison with conventional food) price elasticity and the elasticity of the demand for organic products. This food is very sensitive to any further price increase, thus its tenderers (producers, processors and dealers) should concentrate their efforts on the competition that goes beyond the price.
