Preliminary study on acrylamide in baby foods on the Italian market

The acrylamide content in some baby foods available on the Italian market was measured using a previously developed GC/MS method. The levels were found to range from <50 to 403 mug/kg in baby biscuits and from 126 to 385 mug/kg in oven-baked confectionery products. Less than 148 mug/kg were found in snack foods with chocolate. In homogenised meat, the acrylamide content was less than 50 mug/kg. The data obtained for most of the products tested were not significantly different from those reported by other institutes for the same category of products, but provide preliminary data on the levels of acrylamide in some baby foods sold on the Italian market.
