The periods of ripening, assesed by the change of the external colour of the fruits weekly recorded, was evaluated in 130 varietcs of the Cordoba World Collection (Spain) during six years. The time for the end of the changing colour stage was reached by 50 p. 100 of cultivars between Octuber, 30 and November, 25 after the years of observation. The period of ripening varied between 53 and 69 days for the six years. Although the relative order of ripening among cultivars was aproximately the same in the recorded years, the number of days between any pair of cultivars to reach the same stage of ripening showed big variability. The influence of the time of flowering and crop on the periods of ripening of olive cultivars is discussed.
