Salmonella is a Gram negative bacterium that is associated with certain diseases in pigs such as Salmonella choleraesuis infection. In addition, various salmonella serotypes and especially S. typhimurium can colonise the pig's digestive tract withoutcausing disease and at processing can contaminate the carcase. These can then cause food poisoning in man. S. typhimurium is commonly found in pork products such as sausages. Historically, the greatest concern were the serotypes of salmonella capable ofcausing disease in pigs but these have been brought under control by good management and vaccination.
