The animal protein industry has a bright future ahead. The world population of meat consumers is increasing, not only in numbers but also in income and their (meat) purchasing power is therefore increasing too. At the moment pork is still the most widely consumed animal protein, influenced mainly by consumption in Asia.It is predicted that by 2020 poultry meat will take over from pork as the major source of animal protein (Fig. I). Religious factors besides, a much better developed fast food outlet system is the major reason for this shift.
