Hydrolysates (n = 4) were obtained from bovine haemoglobin concentrate (BHC) and used to fortify extruded maize (corn) products. Extrusion was carried out with a Brabender single-screw extruder. Physicochemical properties of the extruded products were measured. Fe availability was estimated by the dialisability method, which measures the mineral dialysed after a double digestion which simulates physiological processes. The physicochemical properties of the extruded products were not affected by fortification, with the exception of total soluble solids. The enzymic hydrolysis increased Fe dialisability with respect to the substrate. The highest value of Fe dialisability corresponded to the more hydrolysated sample. Extruded products fortified with BHC hydrolysates showed higher Fe dialisability than those fortified with BHC. However, Fe dialisability corresponding to BHC was lower than that expected from haem Fe. Therefore, haem-Fe availability is low when it is determined in the absence of meat proteins, and hydrolysis could increase potential Fe availability.
