摘要

Twenty samples each of sour dahi and misti dahi from unorganized sector and five samples of misti dahi from organized sector collected from different markets of Kolkata and its surrounding areas were evaluated chemically, microbiologically and organoleptically. Five samples of sour dahi from unorganized sector and six samples of misti dahi from unorganized as well as organized sector did not conform to the legal standard in respect of Fat and SNF. The Microbiological quality of sour dahi and misti dahi from unorganized sector was very poor. Overall quality of misti dahi manufactured in the organized sector was found to be the best among all samples.
