ABSTRACTThe cleaning‐sanitizer sequence which is now being successfully used on aseptic bulk tanks for storage of acid products was evaluated for future use with low acid foods. The AOAC Sporicidal Test utilizing unglazed porcelain penicylinders and cylinders coated with the bulk tanks lining material was used to appraise the cleaning and sanitizing sequence. Various modifications of the original standard cleaning sequence were also tested. Spores dried on the two carriers displayed dramatically different destructive rates.
