These new instant starches with, contrary to traditional drumdried starches, perfectly intact granules clearly offer improved performance compared to drumdried starches, such as higher viscosity, better stability and typical 'cook-up' texture. Apartfrom the cold water swelling starches, various other new instant starches offer a wide array of functionalities such as better dispersability, texturising properties and gelatin replacement.
