Fungal contamination of milk products has tremendous spoilage potentials resulting in huge economic losses and is also important from public health point of view. Paneer is a highly relished milk product consumed by almost all socio-economic classes and age groups of Indian population. It is a very palatable and has a good nutritive value. About five per cent of the total milk production of India is used forpaneer production (ICAR, 2002). Paneer is almost always stored at refrigeration temperature by the retailers but does this prevent yeasts from growing? Keeping this in mind the present study was undertaken to assess the effect of refrigerated storage on the yeast counts of paneer.
