A callus isolated from Jerusalem artichoke tuber was found to have much more cell wall material and tyrosinase activity than the original tuber, and its dry weight was dependent on the sucrose concentration in the culture medium. All calluses and a crown gall tested contained no detectable inulin. Even though different cultures were widely different in their dry weight, this was closely related to their total hexose content, and the latter in turn was proportional to their free hexose content.
