摘要

Probiotics: Probiotics are defined as viable cell preparations or foods containing viable bacterial cultures or components of bacterial cells that have beneficial effects on the health of the host. Hence, live microorganisms and substrates (sometimesknown as prebiotics) that promote growth of indigenous probiotic microorganisms and components of probiotic microorganisms are included (Letellier et al., 2000). Probiotics are health enhancing functional food ingredients used therapeutically to preventdiarrhoea, improve lactose tolerance, prevents cancer and lower serum cholesterol levels, e.g. Lactobacillus and bifidobacterium etc.
