A wide range of processes is now available for the treatment of winery effluents. Aspecific methodology should be applied to choose the most adapted solution according to the constraints (characteristics of effluents, quality required fortreated waters, local environment, storage capacity,...). The specificity of biological treatment applied to winery effluents and the possible performances are discussed. A wide development is given to the semi-continuous and to the batch processes adapted to the small wine-making units. Among them, the systems combining aerated storage and various additional polishing treatment techniques are highlighted.
