摘要

The completion and the greying of tea may now be considered. At a high magnification fresh leaf presents a smooth, dull green surface. During rolling this is distorted and a thin film of leaf juices is deposited. These include pectic substances whichform a kind of varnish when the leaf dries. Thus fired tea is encased in a transparent film through which the light passes and is then reflected, giving the leaf a colour dependent on the thickness of the film and the nature of the surface below.
