Horseradish (Armoracia rustkana) is cultivated for its strong tasting roots that are grated fresh or processed into a sauce and used as dish condiment and as a source of horseradish peroxidase. The species is gaining an increasing interest due to therichness in glucosinolates (GLS) that besides their relevance for human health benefits are promising candidates for innovative applications in different fields (e.g. cancer protecting component, natural anti-bacterial, fungicide or pesticide) (Vig et al., 2009). Factors influencing the glucosinolate content and profile in Brassicaceae are reported by several authors (BjSrkman et al., 2011). Thus, the aim of this study was to assess the influence of nitrogen and sulphur supply on root quality of horseradish harvested in two different times.
