During the past twenty years a great deal of basic research has been carried out on the process of tea manufacture, and it is now possible to fill in at least an outline of the principal chemical changes taking place between withering and firing. It is essential that the student of tea manufacturing should have some elementary knowledge of these changes, for, without such understanding, it is impossible to grasp the principles of the process.
