Studies on physico-chemical characters of fruits of bael genotypes

摘要

Bael (Aegle marmelos Correa) is an important indigenous fruit of India. Its importance lies in its curative, pesticidal and nutritive properties. The fruit is a rich source of carbohydrates, vitamins and minerals. Mature green fruits are used for candying, while ripe fruits are used for preparation of squash, necter, pulp powder and value-added products. To obtain sufficient pulp for processing, it is essential to select such genotypes which have higher recovery of pulp with good TSS. Although significant variation in physico-chemical composition of fruits of various genotypes has been reported (Jauhari et al., 4; Mazumdar, 5; Teaotia et al., 8), such information are meagre on newly-selected genotypes of bael. Therefore, studies were undertaken to find out variation in physicochemical characters of fruits of 8 genotypes under tarai condition of Uttar Pradesh.
