Tomato is one of the most important vegetable crops grown worldwide both for its fresh fruits and processed products. It is an important protective food because of its high nutritional value which plays a pivotal role in human nutrition. Nevertheless,the presence of anti-nutritional factors, e.g. oxalates, cannot be under estimated. Recently, considerable interest has emerged among the scientific community over the anti-nutritional factors present in food items. Free oxalates can bind to essential dietary bivalent minerals like calcium and magnesium, rendering them unavailable and reducing the calcium level in blood. Little attention has been paid so far to find out oxalate content in tomato and its association with other nutrient components. Therefore, the present study was undertaken to determine the correlation coefficients with respect to oxalates and other horticultural parameters in tomato.
