Hyphopichia burtonii, a yeast-lite species, has been frequently isolated from maturing hams subsequent to the fat smearing stage ("sugnatura"). The competitive activity of this species was tested against the filamentous fungi Penicillium solitum and Penicillium nordicum, which are undesired species, and Eurotium rubrum. In the competition trials (carried out at a_w 0.85 and 0.90, at I4 deg C and at 18 deg C), H. burtonii GM153 proved to have a high degree of invasiveness against the Penicillia in allthe conditions and, at !8 deg C and a_w 0.90, a/so against E. rubrum. In the trial in YES culture broth, P. nordicum was inoculated subsequent to the growth of H. burtonii COM153 and GS162) and of Debaryomyces hansenii (GM147), inoculated individually.The two strains of H. burtonii showed to display more inhibitory activity against the growth of the "mould" and the production of ochratoxin A fOTA) than that shown by the D. hansenii GM ì47 strain. Finally, in the trial at a_w 0.90 and of I8 deg C H. burtonii GM 153, previously inoculated and grown for 14 days in medium containing ham, proved to partly inhibit the growth of P. nordicum and, above all, the production of OTA during all the incubation times examined.
