This study looked at two strains of anaerobic, thermophilic and gas-producing bacteria isolated from non-concentrated tomato products. The strains, named 433 and 465, were identified as Thermoanaerobacterium thermosaccharolyticum. Growth and inactivation kinetics, metabolite and gas production, as well as pH changes as a function of inoculum and temperature were evaluated. The logarithmic growth phase was short and cell inactivation was very rapid for 433 (about 16 days), while for 465 it was dependent upon temperature and ranged between 12 and 42 days. The strains produced acetic acid, butyric acid, lactic acid, hydrogen and carbon dioxide, while one also produced ethanol.
