The formal (organised) Hquid milk marketing had its roots towards the end of the 19th century with the establishment of military dairy farms in India. But the real breakthrough came after the country's independence, during the 2nd Plan onwards with the establishment of the different government milk schemes. Liquid milk plants were initially set up in the Metros and later, in other major towns of India, to meet the increasing urban market milk demands, besides resettlement of the city milch animals. The milk production system in India is largely the domain of landless labourers, small and marginal land holding farmers. It subsisted primarily on crops residues and on a low input- low output production model.
