Development and evaluation of retort pouch processed ready-to-eat coconut kheer

摘要

Coconut palm (Cocos nucifera L), a member of the Palmae family, is one of the economically important trees in the world. A significant portion of coconuts are processed into coconut oil, desiccated coconut, coconut milk / cream and copra. Several traditional foods containing coconut products are being prepared and processed using newer processing techniques and tested for their acceptability, quality and commercial viability.
