Enzymatic studies in germinating aromatic and non-aromatic rice varieties

The isoenzyme of esterase, peroxidase, glutamate dehydrogenase and amylase were studied after 24, 48 and 72h of germination in PB-1 (Basmati aromatic), P-1176 (Non-basmati aromatic) and Pusa-834 (Non-aromatic) varieties of rice seedling. The assay ofenzyme activities of peroxidase, glutamate dehydrogenase (GDH), amylase, protease and glutamate oxaloacetate transaminase (GOT) were done. In case of esterase, the most predominant band was absent in all the varieties after 72h of germination. Peroxidase activity was positively correlated in all the varieties with the period of germination, which had been reflected In their Isoenzyme pattern. The activity as well as isoenzyme pattern of GDH was maximum after 48h of germination. The activity of amylase,protease and GOT were higher in Pusa-834 (Non-aromatic) than aromatic varieties during germination.
