Chemical composition of yak milk.

36 samples of yak (Poephagus grunniens L) milk, which were all mastitis test-negative and varied in colour from yellowish white to golden yellow, had the following composition (mean values in parentheses): specific gravity, 1.018-1.042 (1.030); titratable acidity, 0.18-0.45 (0.29)%; pH, 5.5-6.5 (6.00); TS, 9.19-28.29 (15.63)%; SNF, 2.00-16.20 (7.05)%; fat, 6.2-13.0 (8.6)%; lactose, 3.28-6.97 (4.52) g/dl; and ash, 0.2-1.0 (0.4)%.
