An account is given of the EU allergenic directive, which was approved on 10 November 2003, and details are given of its enforcement in Italy from 25 November 2004. Current methods of analysing immunological and anaphylactic reactions to allergenic food are described, and the importance of correct labelling on food products is emphasised..
