In 2004, the sales of UHT milk, yoghurt, soft cheese, strachino cheese, fresh cheese and semi-hard cheese in Italy increased by 5.8, 4.9, 3.4, 6.0, 1.2 and 0.6% respectively, and the sale of hard cheese and butter decreased by 0.1 and 2.7%. 55% of milk and cheese products were sold in hypermarkets or supermarkets, and sales in traditional and convenience stores fell by 3.1% compared with the previous year. Data are tabulated for the sales of different kinds of cheese at the various types of outlets. Although the overall sales of industrial cheese increased by 2.5%, sales of cheese spreads decreased by 4.2%.
