The incorporation of lean manufacturing principles could enable many food manufacturing operations to become more flexible. Flexibility is now a core requirement for all manufacturers. Even food producers, one of the last bastions of large batch production, are facing growing customer demands for delivering greater variety, in smaller quantities and at less cost. Some food manufacturers are turning to the lean manufacturing philosophy to help them achieve this goal. However, while there are signs that this methodology is starting to be accepted by the food industry, its adoption is not as rapid as it could be. There are still many managers who either simply do not know what Lean is about, or who wrongly regard it as an approach just for the automotive industry.
