Dairy product processors have particular concern with the risk of bacterial contamination. Bacteria present on long shelf-life products such as cheese can grow to fatal levels. Although the focus has been put on hygiene cleaning processes, these are limited to out of production hours, providing the opportunity for bacteria to grow on the surfaces during the production shift.
